We could write a lot about whites and their role in the great world of wine. It is often said that people think of wine only as red, limiting their own tasting and gustatory experience. In reality, whites are often great expressions of the territories from which they derive and can open up to interesting moments of pairing. Depending on the wine, in fact, we can try them with what is traditionally believed to be the most adaptable food: fish. But that’s not all. These wines are adaptable and can easily marry with cheeses and even (perhaps more surprisingly) with meat dishes. Some solutions with pork or lamb make you appreciate the size and the ability to accompany. As always, the problem remains in communication. Because you need to be able to propose new combinations and have these wines tested directly with the dishes to demonstrate live how pleasant they are in different forms. It is therefore necessary that you stimulate your interlocutors to try without having any prejudice. I would like to advise you to play with the wines and the dishes after having experimented with the combinations yourself.
As for the choice of wines we can range over the whole Peninsula. Pleasantness flows along the boot, touching famous areas such as Alto Adige and Friuli Venezia Giulia (Colli Orientali for example), without forgetting Veneto (Soave) and the jewels of Piedmont (Timorasso and Roero Arneis). Central Italy will also amaze you with Tuscan whites and the great variety of Umbrian, Lazio, Marche and Abruzzo cultivars (Trebbiano Spoletino, Grechetto, Verdicchio, Ribona, Pecorino). Campania felix will give you the various Fiano, Falanghina, Greco di Tufo, Coda di Volpe. Puglia itself with nearby Basilicata will thrill you. Then Sicily with grapes like Catarratto and Carricante.
Each of them can be a pleasant moment both as a combination with food and as a moment of relaxation. It is always important to choose the wine according to the situations and moments. Furthermore, it is also important to remember how important it is to think of white wine as a bottle that can age excellently. Some wines can be enjoyed immediately and over time.
