What definition would you give to Pinot Noir?
It is a vine that we know is versatile even in the world, in Oltrepò Pavese it finds perfect locations, different clones are used for which the main vocation is that of sparkling wine. Also in other regions of Italy, sparkling bases made in Oltrepò were actually drunk, so in our country Oltrepò has been drunk for 150 years without knowing it.

And then?

Then over the years they rightly began to implant different clones, which allowed them to do other things including great pinot noir and red versions both in young and aged versions and there was also an extraordinary pinot that few know : it was sparkling white and before prosecco conquered the world it was young, fresh, sparkling wine for aperitifs. Extraordinary.

One of all?

The Sangue di Giuda is my passion, it is an absolutely territorial wine because it is made with native vines, it is a wine to drink fresh, young, extraordinarily elegant and with a low sugar residue so it is not cloying, it is very pleasant and I for the past 12 years I have been proud of having invented the most original combination of all for New Year’s Eve: a Sangue di Giuda with cotechino and lentils is the end of the world. Try it.
