Rosarubra Intimo – Montepulciano d’Abruzzo DOC and Merlot blend

Intimo is a spectacular wine, a wine for meditation, a wine to drink when you are about to make important decisions, because it creates such a perfect atmosphere that it clears your mind of bad thoughts.

Sensory notes

Colour: A dark, intense, impenetrable, aristocratic ruby red, with persuasive purple highlights on the rim and an enviable texture.
Nose: The aromas are vigorous and captivating, with a predominance of blackberry jam, plum, cherry, wild berries and tobacco leaves.
Taste: The taste is an elegant and sublime concentration of ripe fruit, perfectly in tune with the nose; chocolate, vanilla, coffee, toast, a moderate warmth and an extraordinary softness envelop the mouth, in excellent balance with a freshness and tannins that are absolutely alive, but velvety, round, never intrusive. A very long finish, charming and delicately mineral.

Harvest

It is produced in one of the most suitable areas of Abruzzo, from ancient vineyards, trained by the Guyot and Abruzzi Pergola systems, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure.

Obtained thanks to the extraordinary intuition of combining two particularly synergic vines, Montepulciano d’Abruzzo and Merlot, both of which are the result of scrupulous manual selection, an October harvest and certified biodynamic agriculture, which guarantees maximum respect for the surrounding environment.

The grapes, therefore, undergo a slight over-ripening, that is, a slight dehydration that generates an imperceptible concentration of residual sugar, which is then a characteristic found in the wine and which, together with the impeccable harmony of the olfactory and taste qualities, has decreed its incredible success.

Vinification

Separate and distinct fermentation in stainless steel vats for the two grape varieties in the blend, Montepulciano d’Abruzzo and Merlot, followed by an initial maturation in cement vats for a few months, at the end of which the wine is aged in oak barriques for about a year. Then, the wine will return to rest in the cement vats for another 6 months, before being bottled in the total absence of oxygen, and aged for a further 6 months.

How to pair our red wine

At a temperature of 16-18 degrees, or even a little more, in a large, wide-rimmed glass, it is important to wait a few minutes after opening the glass before serving it, to give it time to open up, to express itself fully, and to bring out all its qualities.

It is a wine that is a wonderful accompaniment to refined aperitifs, refined first and second courses, vegetarian cuisine, and medium and mature cheeses.

Imagine crostini with livers, risotto with mushrooms, partridge with plums, beef cheek, semi-hard pecorino di Atri.
